This is how I prepare the pantry larder for Summer produce that is starting to come in from the vegetable garden.

My Homesteaders lifestyle means I need to be very organized with food storage, preservation and using my food in order so no food is wasted.

I remove the root cellar foods that need to be used up immediately and turning them into a broth, soup or stew, anything beyond using goes out to the compost.

I clean my shelves and jars, making sure all of my jar lids are still securely on and that the jars are in order of date. I take note of what foods I need more of on my shelves and what foods I have plenty of. Usually it is the Summer food that is currently growing in the garden, that is what is getting low.

I remove any jars that my family won't eat or use, sometimes jars get made up with something that isn't popular and those valuable jars could be used for something we would eat. I then fill up my Pantry jars, make a tart and start a batch of kombucha.

It may not look very different from the beginning, like a kitchen makeover would but I am feeling ready for the Summer produce to start coming in.

APRICOT TART Ingredients

Greased tart dish, lined with pastry

1 quart of canned Apricots in Honey syrup (Ball Blue Book - Guide to Preserving) Topping Mix Melted butter

Self Raising Flour

Rolled Oats

I don't use sugar in the topping as the apricots are sweetened already but you may like to add some in.

Cook in oven until pastry is cooked and toping is lightly browned.
